High Vibe Highlight: Zucchini

Zucchini is easily overlooked.

Sure, zoodles (zucchini noodles) have gained some popularity with those seeking alternatives to pasta. But it still hasn’t made its way into most of our diets.

But should we be grabbing zucchinis off the shelves a little more often? After all, there are so many benefits to eating this versatile squash.

  • Zucchini are high in water and fiber, which aids with digestion.

  • They contain a variety of vitamins and minerals, including vitamin B6, folate, vitamin C, vitamin K, riboflavin, potassium and manganese.

  • They contain antioxidants and anti-inflammatory phytonutrients, which can help rid the body of free radicals, boost your immunity, protect against disease and slow down aging.

  • Zucchini can help lower blood sugar levels.

  • They can help maintain healthy blood circulation, blood pressure and lower cholesterol levels.

  • They can help improve and maintain eye health thanks to zeaxanthin and lutein.

  • The B-vitamins found in zucchini help reduce fatigue and improves mood, energy and various brain functions.

  • The vitamin C found in the peels of zucchinis can have a positive effect on the thyroid and adrenal glands.

GRILLED LEMON GARLIC ZUCCHINI

  • 1/4 cup unsalted butter, melted

  • 3 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • Juice of 1 lemon

  • Kosher salt and freshly ground black pepper, to taste

  • 2 medium zucchini, cut diagonally into 1/2-inch-thick slices

  • 2 tablespoons chopped fresh parsley leaves

In a small bowl, whisk together butter, garlic, Italian seasoning and lemon juice; season with salt and pepper, to taste. Brush zucchini slices with butter mixture.

  1. Heat a grill pan over medium high heat. Add zucchini in a single layer and grill until charred on both sides and just beginning to soften, about 2 minutes per side.

  2. Serve immediately, garnished with parsley, if desired.
